Vegan Fresh Lemon + Dill Sauce with So Delicious® Yogurt Alternative

 

Ingredients:

 

2 Containers: So Delicious® 5.3OZ Plain Yogurt Alternative

1/2 Cup Fresh dill, on stem

Juice of ½ lemon

1 Tsp Salt

1 Tsp Pepper

 

Directions:

 

Pour all ingredients in a blender. Blend on medium until well combined. Garnish with fresh dill on stem and a fresh lemon slice, if desired.

 

Plant-based Meal Suggestions:

 

Oven-baked carrots with roasted potatoes, garnished with fresh carrot matchsticks with sides of cucumber slices + fresh gluten-free bread for dipping.

 

Directions:

 

Wash + peel carrots. Drizzle carrots with olive oil + lightly salt on parchment paper. Bake in the oven at 350 degrees for 20 minutes.

 

Wash + thinly slice multi-colored potatoes. Drizzle olive oil on parchment paper, + place potato slices on the parchment paper. Drizzle olive oil on top of potatoes. Lightly salt. Bake at 350 degrees for 45 minutes. Broil on low for 5 minutes to desired crispness.

 

Enjoy roasted carrots and potatoes topped with fresh carrot matchsticks + Vegan Fresh Lemon + Dill Sauce with So Delicious® Yogurt Alternative. Include sides of sliced cucumbers + gluten free bread for dipping. Enjoy your plant-based meal!

DIY Vegan Ranch Dip Veggie Boat Recipe

Ingredients:

1 Container Good Karma Plant-Based Ranch Dip

15 Mini Peppers

1 Bunch multi-colored carrots

1 Bunch Radishes

1 Cucumber

1 Yellow Squash

1 Bunch Rainbow Chard

1 Container Mini Heirloom Tomatoes


Directions:

  1. Wash veggies.

  2. Slice mini peppers in half. Float your boat tip: set the pepper on a cutting board to see how it lies flat best + cut horizontally.

  3. Scoop Good Karma Plant-Based Ranch Dip into mini pepper boats.

  4. Peel carrots. Then, cut into slices that create circles. And, cut lengthwise to create matchsticks.

  5. Slice yellow squash + cucumber. Cut into half moon shapes. Also, cut into matchsticks.

  6. Slice radishes. Cut into half moon shapes.

  7. Slice rainbow chard into thin pieces.

  8. Slice tomatoes.

  9. Gather toothpicks.

  10. Arrange sliced veggies on toothpicks. Place toothpick into the boat.

  11. Add veggie slices to boats. Float your boat tip: pretend the pieces are ores, people, captains + the crew.

  12. Enjoy!

Child Led activity: To allow children to actively participate, have a child safe vegetable knife available for slicing. Let children slice softer veggies like: yellow squash, tomatoes + rainbow chard. Encourage children to decorate and arrange the boats. Also offer an additional bowl of Good Karma Plant-Based Ranch Dip to encourage dipping + exploration of vegetables.

Discuss colors, textures + the vitamins that the veggies offer while creating + enjoying the boats. Try the veggies with your children to encourage them to try them all as well!

Plant-based Ice Cream Pie with So Delicious

 

Ingredients:

 

1 Container So Delicious® Oatmilk Oatmeal Cookie Frozen Dessert

2 Containers So Delicious® Cranberry Cherry Swirl Dairy-free Mouse

1 Cup Sunflower Seed Butter

1 Cup Fresh Raspberries

1 Cup Fresh Blueberries

1 Cup Fresh Blackberries

2 Cups Frozen Cherries

2 Tbsp Agave Nectar

1 Container Edible Flowers

 

Granola Crust Ingredients:

2 Cups Gluten Free Granola

1 Cup Sunflower Seed Butter

¼ Cup Agave Nectar

¼ Cup Hemp Seeds

¼ Cup Chia Seeds

1 Tbsp Vanilla

Directions:

Melt 1 cup sunflower seed butter for 30 seconds in microwave. Pour sunflower seed butter + agave nectar into the granola. Stir in the hemp seeds, chia seeds + vanilla.  Preheat over to 350 degrees. Lightly grease a 9 inch spring form pan. Pour + press the combined granola mixture into the pan. Bake at 350 for 10 minutes. Let cool.


While preparing the granola mixture, let the So Delicious® frozen desserts thaw.


Pour the So Delicious® Oatmilk Oatmeal Cookie Frozen Dessert onto the granola crust.


Melt 1 cup of sunflower seed butter for 30 seconds. Pour over the Oatmilk Oatmeal Cookie Frozen Dessert.


Pour 1 1/2 Containers So Delicious® Cranberry Cherry Swirl Dairy-free Mouse over the sunflower seed butter layer.


Place in the freezer for two hours or overnight.

 

In a blender, blend together 2 Cups Frozen Cherries + 2 Tbsp Agave Nectar. Swirl this mixture onto the top of the pie.

 

Arrange fresh berries + edible flowers on the top of the pie. Reserve additional berries to serve alongside the pie.

 

Enjoy!

Plant-Based Almond Zoodles with Silk + Sprouts

Ingredients:

1 Cup Spiralized Zucchini

1 Cup Spiralized Sweet Potato

1 Cup Spiralized Beets

½ Cup Pomegranate Seeds

½ Cup Sliced Heirloom Tomatoes

¼ Cup Chopped Leeks

¼ Cup Chopped Cilantro


1 Cup Almond Butter

½ Cup Silk Almondmilk

2 Tbsp Hemp Seeds + more for garnish

1 Tsp Garlic Salt

2 Tbsp Olive Oil

1 Tbsp Black Pepper

1 Tsp Red Pepper Flakes

Directions:

Spiralize zucchini, sweet potatoes + beets. Or, purchase the veggies pre-spiralized as a time-saver. Saute zucchini with olive oil in a frying pan on medium-high heat until golden. Continue to saute the sweet potatoes + beets.

In a pot, add almond butter + Silk Almondmilk. Stir over medium heat. Add olive oil, garlic salt, black pepper + red pepper. Continue to stir until well combined. Add in hemp seeds.

Prepare with the sauteed zoodles in a bowl, scoop Almond sauce onto the dish. Garnish with: heirloom tomatoes, leeks, cilantro, pomegranates + extra hemp seeds.

Simple Granola Bites Recipe:

Ingredients:

2 Cups Oats or Granola -We used New England Berry Granola

1 Cup Nut or Seed Butter -We used WOW Butter

1/4 Cup Local Honey (Substitute Honey for Agave Nectar for a Vegan recipe)

Directions:

Pour the granola into a large mixing bowl. Heat the nut butter/Seed butter/WOW butter in the microwave in a glass bowl for 30 seconds, then pour over granola. Pour honey into mixing bowl. Next, combine all ingredients. Form into balls and place in paper cupcake liners. Boom, simple + fun. Plus, nutritious.

          1/2 teaspoon ground cardamom

Hummus Recipe with American Gluten Free + San Francisco Salt

Looking for a refreshing, plant-based recipe this spring? We've got you covered. Here, I'm sharing a super easy Hummus recipe with American Gluten Free + San Francisco Salt Co.

I love that hummus is a nutritions + quick recipe that can feel rich + satisfying as well. The lemon juice + Himalayan Salt sure is a way to top it off.

Homemade Hummus Ingredients:

3 Cans of Chick Peas

1 Can of Reserved Water from the Chick Peas

2 Cloves Roasted Garlic

3 Tbsp Hemp Seeds

2 Tbsp Fresh Lemon Juice

2 Tbsp Olive Oil

1 Tbsp Paprika

1/2 Tbsp Himalayan Salt

1/2 Tbsp Black Pepper

Directions:

Drain 2 cans of chick peas. Add to blender. Add addition can of chick peas with reserved water to the blender.

Roast 8 cloves of garlic in a frying pan with 1 Tsp olive oil over medium heat. Continue to turn with a spatula  until toasted. Add garlic cloves to blender.

Juice one lemon. Reserve 2 Tbsp fresh lemon juice. Add to blender.

Add Olive Oil, Paprika, Salt + Black Pepper to the blender. Blend on medium high until a smooth consistency is achieved. Scoop out into a reusable container. Top with a dash of olive oil, paprika, lemon juice + Himalayan Salt

Loaded Vegan Baked Potato Recipe

Where are all my busy moms at?! *Me raising both of my hands!* I have some baked potatoes here to help save the day. Sometimes I forget about the convenience of baked potatoes. Incase you've forgotten too, I have a loaded vegan baked potato recipe for you.

I love baked potatoes because they are naturally gluten-free + they can easily be made dairy-free with olive oil or avocado oil. I also love baked potatoes because they can be made ahead + keep well as a left-over.

Loaded Vegan Baked Potato Recipe

Ingredients:

5 lb Bag of Russet Potatoes

2 Bunches of Radishes

1 lb of Brussel Sprouts

2 Cups of Walnuts

1 Bunch Rainbow Carrots

1 Cup of Crinkle Cut Carrots

Olive Oil or Avocado Oil

Truffle Salt to Taste

Aluminum Foil

Directions:

Wash + scrub all of the potatoes. Carefully pierce around the potato with a fork or sharp knife. Tear sheets of aluminum foil + place in a pile. Brush oil on the skins of the potatoes + lightly sprinkle with truffle salt. Place the aluminum covers potatoes on a baking sheet. Preheat over to 395. Bake at 380 for 50 minutes. Check on the potatoes + bake for an extra 10 minutes if needed. Let cool. 

Wash the vegetables. Lightly toss with oil + truffle salt. Place in a glass baking dish. Add the walnuts + mix in with the vegetables. Bake on the bottom rack at 380 for 20 minutes. Broil on low for 5 minutes if you would like the vegetables extra crispy. 

Top your potato with the roasted vegetables + walnuts. Mix up your toppings throughout the week to freshen up your left-overs. Cheers!

The roasted walnuts really bring something special to this meal. I've spent the past 3 1/2 years strictly avoiding nuts due to my son, Bowan's life threatening allergies to tree nuts + peanuts. We truly were shocked to learn through skin + blood testing as well as through hospitalized Oral Food Challenges that Bowan has outgrown tree nuts + peanuts that once gave him hives just from coming in contact with a granola bar wrapper or playground equipment. As a vegetarian, nuts used to be a big part of my diet. So, now we are working them back into our lives. I am still focusing on allergy friendly recipes while also honestly including some new foods that we can safely have in our home + in our bodies.

Valentine's Day Chocolate Covered Apples with Enjoy Life

Ingredients:

2-5 Apples

1 Bag Enjoy Life Mini Chips

1 Small Watermelon

1 Lemon

Sugars + Sprinkles of your choice

 

Parchment Paper

Mini heart-shaped cookie cutters

Optional: Plastic red + white tooth picks

 

Directions:

Wash + dry 2-5 apples. Cut into thin slices working from the outside, in. Cutting from four sides, like a cube. Wash + cut the lemon into slices. Squeeze the lemon juice into a medium bowl. Place the apple slices in the bowl of lemon juice, stir to coat all of the apple slices. The lemon juice helps to keep the apples from browning!

Place the apple slices flat on a cutting board. Press heart shaped mini-cookie cutters into the apples. Snack on the excess apple pieces! I wont tell! Place the heart cut-outs flat onto a cookie sheet lined with parchment paper. 

Wash the mini watermelon. Cut in 1/2. Then, cut into slices. place the watermelon slices flat on a cutting board + cut into heart shapes. Place the heart cut-outs flat onto a cookie sheet lined with parchment paper. 

Pour 1/2 a bag of Enjoy Life Mini Chips into a microwave safe bowl. Microwave at 30 second increments + stir. Continue to heat + stir until the chocolate is completely melted. 

With a spoon or butter knife, drizzle chocolate onto the apple + watermelon hearts. Top with your favorite sprinkles + sugars.

Easy Dill Sauce Recipe with a Quinoa & Brown Rice Family Dinner with Path of Life

I'm always looking to make dinner prep time a little easier. One of my life savers is the brand Path of Life. I love short-cuts, but I still want to eat "clean," natural + simple. Here, I'm sharing how this brand can help make your meal prep simpler. Plus, keep reading for a really delicious Fresh Dill Sauce to round out a full dinner for your family .

Easy family dinner with a fresh dill sauce recipe

Path of Life offers 6 organic + natural microwavable side dishes. I used the Brown Rice & Quinoa variety here. But, there are some other really delicious dishes, like: Southwest Quinoa, Mediterranean Quinoa, Superfood Pilaf + more. They are all ready in 4 minutes. Just pop in the microwave, chop some veggies or throw your sauce ingredients in the blender + multi-task while this dinner side is cooking.

I have grown to love cooking. But, I do not love all the dirty pots + pans. Honestly, I often need to clean my stock pot from the night before just so it's ready to make dinner again. Fresh Dill Sauce

Ingredients:

1 Cup Fresh Dill

1/2 Cup Chopped Leeks

1/2 Cup Macadamia Nut Oil

Juice of 1/2 a Lemon

2 Tablespoons Hemp Seeds

2 Tablespoons Brown Rice Syrup

1/2 Teaspoon Truffle Salt

Modifications: For a tree nut allergy substitute Macadamia Nut Oil for Avocado, Grapeseed or Olive Oil

Fresh Dill Sauce Directions:

Wash + rince 1 cup of fresh dill. Hey, grab it from your windowsill if this is a herb you grow! Place the dill in your blender. Chop 1/2 cup of leeks, rinse + add to blender. Measure + pour 1/2 cup of macadamia nut oil into the blender. Squeeze the juice of 1/2 a lemon into the blender. Measure + pour into blender: hemp seeds, brown rice syrup + truffle salt. Blend on medium for 30-60 seconds, then pour into a small serving dish.

Easy Dill Sauce with Quinoa & Brown Rice Family Dinner

Ingredients:

1 - 2 bags of Path of Life Organic Quinoa & Brown Rice

1 batch of Fresh Dill Sauce

1 can of Garbanzo beans, strained

1/2 head of cabbage, chopped

Optional: sliced almonds, pumpkin seeds, walnuts or sunflower seeds for topping

Optional: dairy or non-dairy cheese for topping

Directions:

Microwave the Path of Life Organic Quinoa & Brown Rice pouch, while blending the Fresh Dill Sauce in the blender. Open + strain 1 can of garbanzo beans. Chop 1/2 head of cabbage. After the pouches are microwaved, let stand. Then, place in a sauce pan with 2 tablespoons of the fresh dill sauce + lightly sauté. Or, just stir the sauce in and forget that dirty pan! Plate your dish with the quinoa & rice blend, topped with chopped cabbage, garbanzo beans tossed in the fresh dill sauce + a side of the fresh dill sauce. Top with optional toppings such as: sliced almonds, pumpkin seeds, walnuts, sunflower seeds, parmesan cheese or cashew cheese.

Apple Cinnamon Chia Seed Pudding with Good Karma Flaxmilk

Ingredients:

4 Cups Good Karma Flaxmilk Original

1 1/2 Cup Chia Seeds

3 Tbsp Confectioner's Sugar

1 Tbsp Cinnamon

1 Tbsp Agave Nectar

1/4 Tsp Vanilla Extract

3 Apples Cored and Sliced

Additional Cinnamon + Confectioner's Sugar for topping.

Directions:

Combine Good Karma Flaxmilk + Chia Seeds. Stir well until combined. Next, add confectioner's sugar, cinnamon, agave nectar + vanilla. Stir into the pudding + divide into cups. Cover + refrigerate over night. 

Enjoy chilled or microwave for 30 to 60 seconds. Top with freshly sliced apples + sprinkled confectioner's sugar + cinnamon. 

 

Adaptation for young children/baby led weaning: Combine the Good Karma Flaxmilk, chia seeds, agave nectar + vanilla.  Reserve 1/2 cup of the mixture. Then, add the confectioner's sugar and cinnamon to be enjoyed by the big kids + adults! 

 

Yields approximately 6 small Mason Jars.

It's back to school season across the country + I have the Ultimate Back to School Sammie for you. Perfect for adults + kids alike. It's nut-free + gluten-free, but you'd never know it. It's hearty + sweet. It's fun + cheery. Keep reading for the recipe for your new go-to Sammie with Canyon Bakehouse.

Typically, my husband is a hard sell on my recipes. Well, he loved this sandwich + was wanting more. I think you'll love it, too! I'm sure your kids will, too!

The secret ingredient? Grilled peaches. Yep, the grilled peaches give it an unsuspecting kick. Fresh, hearty, sweet, yet not too sweet with the balance of the Canyon Bakehouse bread + the layers of sunflower seed spread.

Ultimate Back to School Sammie with Canyon Gluten Free

Ingredients:

2 Slices of Canyon Bakehouse Mountain White

1/2 Cup Fresh Strawberry Slices

1 Fresh Peach, cut into thin slices

4 Tbsp 88 Acres Chocolate Sunseed Spread

1 Tbsp Olive Oil

Directions:

Wash + slice the peach. Pour olive oil into a frying pan. Turn heat to medium high. place peaches in the pan with a coat of olive oil. Grill + flip so both sides are nice + toasty. Remove from pan + let cool. Make sure the peaches completely cool before the sandwich is packed in a lunchbox.

Next, wash + slice strawberries. Slice extra for snacking. 

Place 4 Tbsp Chocolate Sunseed Spread in a small glass bowl. Heat in the microwave for 15 seconds to help it melt a little so it will spread on smooth + evenly. Spread a layer of Chocolate Sunseed Spread on the inside of both pieces of Canyon GF Bread

Next, place the bottom piece of bread on a plate, bread side down. Place a lawyer of strawberry slices on the bread. Then, place a layer of grilled peaches, topped with a second layer of strawberries. And, completed with the final piece of Canyon GF Bread with the Chocolate Sunseed spread.

Gluten Free Roll Ups with Sunflower Seed Spread + Jelly + Fresh Fruit

This twist on the typical lunchtime sandwich is a fun way to brighten up a lunchbox. Perfect for both kids + adults, alike. 

Directions:

Lay a BFee Quinoa + Chia Seed wrap flat on a cutting board. Spread a layer of Sunflower Seed Spread. Next, spread a layer of jelly. My kids like a layer of both raspberry + blueberry jelly! Next, add fresh fruit. Add fruit like: blueberries, banana slices, strawberries, raspberries, pomegranate seeds peach slices or apple slices. Add what is in season, what you have on hand, or try something new. For younger kids, or kids that aren't quite ready for lots of texture or large chunks of fruit, cut the pieces much smaller before placing on the tortilla. Next, take a pizza cutter and cut 1 1/2 inch strips down the tortilla. Then, roll up and place in a bento box. Enjoy!

Gluten Free Pitas with Homemade Hummus + Fresh Veggies

This light + fluffy pita bread sandwich is a hit. I could eat this everyday. A grown ups favorite, yet it can be perfectly modified for the pickiest of kids. 

Homemade Hummus Ingredients:

3 Cans of Chick Peas

1 Can of Reserved Water from the Chick Peas

2 Cloves Roasted Garlic

3 Tbsp Hemp Seeds

2 Tbsp Fresh Lemon Juice

2 Tbsp Olive Oil

1 Tbsp Paprika

1/2 Tbsp Salt

1/2 Tbsp Black Pepper

Directions:

Drain 2 cans of chick peas. Add to blender. Add addition can of chick peas with reserved water to the blender.

Roast 8 cloves of garlic in a frying pan with 1 Tsp olive oil over medium heat. Continue to turn with a spatula  until toasted. Add garlic cloves to blender.

Juice one lemon. Reserve 2 Tbsp fresh lemon juice. Add to blender.

Add Olive Oil, Paprika, Salt + Black Pepper to the blender. Blend on medium high until a smooth consistency is achieved. Scoop out into a reusable container. Top with a dash of olive oil, paprika + lemon juice.

Gluten Free Pitas with Homemade Hummus + Fresh Veggies Directions:

Spread homemade hummus onto the inside bottom of a BFree pita. (For kids that don't yet like big chunks of vegetables, stir small diced veggies into the hummus). Next, top hummus with fresh chopped veggies, such as: rainbow carrots, radishes, cucumber, onions, olives + arugula. Spread your favorite salad dressing onto the top inside of the pita bread. Enjoy!

Pizza is always a favorite, but this is a great portable way to bring it along in a lunchbox!

Directions:

Place a BFree Multigrain Wrap onto a pizza pan. Next, spread pizza sauce onto the wrap. Then, sprinkle cheese or dairy-free cheese onto the sauce. (For kids that don't yet like big chunks of vegetables, chop mushrooms, olives, peppers, fresh basil, arugula, + kale into tiny pieces + mix into the cheese before sprinkling on the wrap). For adults that love the fresh veggies, pile them on! Bake at 350 degrees for 8 minutes or until golden brown. Remove from oven + let cool. Next, use a pizza cutter and cut 1 1/2 inch strips down the tortilla. Then, roll up and place in a bento box. Add fun pics to bring some cheer + to keep the roll-ups together. Enjoy!
