Vegan Fresh Lemon + Dill Sauce with So Delicious® Yogurt Alternative

 

Ingredients:

 

2 Containers: So Delicious® 5.3OZ Plain Yogurt Alternative

1/2 Cup Fresh dill, on stem

Juice of ½ lemon

1 Tsp Salt

1 Tsp Pepper

 

Directions:

 

Pour all ingredients in a blender. Blend on medium until well combined. Garnish with fresh dill on stem and a fresh lemon slice, if desired.

 

Plant-based Meal Suggestions:

 

Oven-baked carrots with roasted potatoes, garnished with fresh carrot matchsticks with sides of cucumber slices + fresh gluten-free bread for dipping.

 

Directions:

 

Wash + peel carrots. Drizzle carrots with olive oil + lightly salt on parchment paper. Bake in the oven at 350 degrees for 20 minutes.

 

Wash + thinly slice multi-colored potatoes. Drizzle olive oil on parchment paper, + place potato slices on the parchment paper. Drizzle olive oil on top of potatoes. Lightly salt. Bake at 350 degrees for 45 minutes. Broil on low for 5 minutes to desired crispness.

 

Enjoy roasted carrots and potatoes topped with fresh carrot matchsticks + Vegan Fresh Lemon + Dill Sauce with So Delicious® Yogurt Alternative. Include sides of sliced cucumbers + gluten free bread for dipping. Enjoy your plant-based meal!

Ingredients:

1 Cup Spiralized Zucchini

1 Cup Spiralized Sweet Potato

1 Cup Spiralized Beets

½ Cup Pomegranate Seeds

½ Cup Sliced Heirloom Tomatoes

¼ Cup Chopped Leeks

¼ Cup Chopped Cilantro


1 Cup Almond Butter

½ Cup Silk Almondmilk

2 Tbsp Hemp Seeds + more for garnish

1 Tsp Garlic Salt

2 Tbsp Olive Oil

1 Tbsp Black Pepper

1 Tsp Red Pepper Flakes

Directions:

Spiralize zucchini, sweet potatoes + beets. Or, purchase the veggies pre-spiralized as a time-saver. Saute zucchini with olive oil in a frying pan on medium-high heat until golden. Continue to saute the sweet potatoes + beets.

In a pot, add almond butter + Silk Almondmilk. Stir over medium heat. Add olive oil, garlic salt, black pepper + red pepper. Continue to stir until well combined. Add in hemp seeds.

Prepare with the sauteed zoodles in a bowl, scoop Almond sauce onto the dish. Garnish with: heirloom tomatoes, leeks, cilantro, pomegranates + extra hemp seeds.

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Maraschino cherries are my favorite vegan ice cream topping. Rather than just having the cherry on top, these popsicles are filled with super sweet marachino cherry juice. I'm sharing this vegan cherry coconut popsicle recipe with So Delicious Dairy Free with you here on the blog.

Ok, I need to be honest with you. These popsicles are so good that I got a straw + tried to drink this melted juice off of the cutting board. I know, that sounds desperate. Desperate times call for desperate measures + I just didn't want to see this sweetness go to waste.

I love feeding my family So Delicious Dairy Free products because they use state of the art allergy testing to make sure each batch is free of major allergens that aren't included in the ingredients. My son, Bowan, has multiple food allergies + I like to know what I'm feeding him. Trace amounts of allergens could cause him to have a reaction. I want to enjoy our ice cream rather than worry about his safety based on a brand of food I chose to buy. Also, we don't go out to ice cream shops because... peanuts, everywhere... The last time I was in an ice cream shop, two years ago, I looked back at the counter + floor + there really were peanuts all over the place. So, we use trusted So Delicious + enjoy our vegan ice cream at home.

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Ingredients:

2 Cups So Delicious Coconut Milk Dairy-Free Frozen Dessert

3/4 Cup Maraschino Cherry Juice

1/4 Cup Confectioner's Sugar

1/4 Cup So Delicious Original Coconut Milk Beverage

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Directions:

Measure all ingredients + pour into blender. Blend on high for 1 minute. 

Next, drink it straight out of your blender pitcher. Just kidding. Well, actually, I really did do that. 

Next, pour into popsicle molds. Place in the freezer. Freeze for 15 minutes. Then, add popsicle sticks + place sprinkles on the top opening of the popsicle. Freeze overnight.

Vegan Truffles: Enjoy Life Foods ProBurst Bites

In the New Year, we always make resolutions to improve our health. But, sometimes they are unrealistic. So, I'm sharing Veganuary tips on Instagram to help you get more plants in your diet + to stay motivated to eat a healthy, plant-based diet. Go vegan in January. One myth about vegan diets is that they don't include protein. Like any diet, restricted or not, we need to make balanced + health-conscious choices. Frozen Coconut Berry Pie with So Delicious Dairy Free

Creating a dairy free, top 8 free dessert really isn't as complicated as it might seem. I just thought outside of the box. And, looked into the carton. The So Delicious carton, that is!

When So Delicious asked me to create a recipe with the Dairy Free Coconutmilk Yogurt Alternative, I thought, creating something for Thanksgiving would be so much fun! Friends, this recipe was fun to create + it is fun + easy to make! No baking! The best part is, you can make this ahead of time + throw it in the freezer + your work for Thanksgiving day is cut down.

Honestly, the most difficult part of this recipe is seeding the Pomegranate. But, I look at it as a relaxing activity, a chance to let my busy mind relax.

To seed the Pomegranate:

First, cut the pomegranate in half. Next, place your strainer inside of your clean sink. Then, hold the half of the pomegranate with your thumbs at the center of the skin, over the strainer + push the halved pomegranate inside out. Next, peel the seeds out of the membranes + place in a separate bowl. Rinse + set aside.

Shhhh... Here's a secret: if you feel pressed for time on seeding the pomegranate, you can buy pre-seeded pomegranates at most grocery stores!

So Delicious Dairy Free

Did you know the pomegranate is a great source of soluble + insoluble fiber + high in Vitamin C? Foods high in Vitamin C are great immune boosters. So helpful, especially around the holidays! Pomegranates are also high in antioxidants. Antioxidants are so valuable for our health, it's really important to include them into our diet, you can read more about the health benefits here.

Ok, let's get onto this pie making adventure.

Frozen Coconut Berry Pie with So Delicious Dairy Free

Ingredients:

Coconut Berry Pie:

2 Cups So Delicious CoCo Whip Original

1 1/2 Cups So Delicious Unsweetened Vanilla "Yogurt" Alternative

1 1/2 Cups Raspberries

1/2 Cup Pomegranate Seeds

3 tbsp Sugar

1/2 tsp Pure Vanilla Extract

Graham Cracker Pie Crust (I used the MI-DEL gluten free + peanut free crust)

Strawberry Sauce:

1 1/2 Cups Strawberries (sliced + hulled)

1/4 Cup Sugar

1 Lemon, zested

Frozen Coconut Berry Pie with So Delicious Dairy Free

Directions:

First, open up your pre-packaged graham cracked pie crust + set aside. Next, seed the Pomegranate, rise + set aside. (See above instructions for seeding the pomegranate). Rinse raspberries + set aside. Measure 11/2 cups So Delicious Unsweetened Vanilla "Yogurt" Alternative + 2 cups So Delicious CoCo Whip + combine in a large bowl. Mix the yogurt alternative CoCo Whip. Add 1 cup of raspberries to the bowl + mash with a fork. Add half of the pomegranate seeds + mix. Heap mixture into crust + freeze for 3 hours or overnight

Next, top with Strawberry Sauce + reserved raspberries + pomegranate seeds.

Strawberry Sauce Directions:

Add sliced + hulled strawberries into blender + zest 1 lemon into the blender. Add sugar + blend on high. Add strawberry sauce when ready to serve + get creative with the reserved raspberries + pomegranate seeds.

Top 8 free dessert: So Delicious Rootbeer Float

Honestly, I think finding safe allergy-free desserts is one of the most difficult aspects of managing food allergies. So many of the classic desserts contain one or many of the top 8 allergens. Plus, many desserts are processed in a way to cause cross-contamination to a dessert that may have been otherwise safe with the main ingredients, prior to processing. So, here is an awesome top 8 free dessert: So Delicious dairy-free rootbeer float.

Did you know that milk allergy (dairy allergy) is the most common allergy in infants + children? Also, many people have a lactose intolerance. The two are often interchanged + misunderstood, but they are very different. Food allergies involve the immune system + have the potential to produce an anaphylactic reaction. Food intolerances, like lactose intolerance do not involve the immune system.

According to food allergy.orgPeople who are lactose intolerant are missing the enzyme lactase, which breaks down lactose, a sugar found in milk and dairy products. As a result, lactose-intolerant patients are unable to digest these foods, and may experience symptoms such as nausea, cramps, gas, bloating and diarrhea. While lactose intolerance can cause great discomfort, it is not life-threatening.

I nursed my son, Bowan for a year after the diagnosis of his food allergies. During that time I strictly avoided all of his allergens. I also avoided foods that could've been cross-contaminated with his allergens. So, I didn't eat ice cream. (Sounds hard, I know!) I knew that most ice cream was or had the potential to be cross-contaminated with peanuts + tree nuts, so I just avoided ice cream. And, honestly I didn't take the time to research ice creams. Until I found So Delicious. They use top-notch allergen testing, that I trust enough to eat myself + let my sweet little Bowan enjoy.
