Ok, I need to be honest with you. These popsicles are so good that I got a straw + tried to drink this melted juice off of the cutting board. I know, that sounds desperate. Desperate times call for desperate measures + I just didn't want to see this sweetness go to waste.

I love feeding my family So Delicious Dairy Free products because they use state of the art allergy testing to make sure each batch is free of major allergens that aren't included in the ingredients. My son, Bowan, has multiple food allergies + I like to know what I'm feeding him. Trace amounts of allergens could cause him to have a reaction. I want to enjoy our ice cream rather than worry about his safety based on a brand of food I chose to buy. Also, we don't go out to ice cream shops because... peanuts, everywhere... The last time I was in an ice cream shop, two years ago, I looked back at the counter + floor + there really were peanuts all over the place. Ingredients:

2 Cups So Delicious Coconut Milk Dairy-Free Frozen Dessert

3/4 Cup Maraschino Cherry Juice

1/4 Cup Confectioner's Sugar

1/4 Cup So Delicious Original Coconut Milk Beverage

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Directions:

Measure all ingredients + pour into blender. Blend on high for 1 minute. 

Next, drink it straight out of your blender pitcher. Just kidding. Well, actually, I really did do that. 

Next, pour into popsicle molds. Place in the freezer. Freeze for 15 minutes. Then, add popsicle sticks + place sprinkles on the top opening of the popsicle. Freeze overnight.

Father's Day is just around the corner + these popsicles are sure to bring cheer to the father in your life. This recipe features a layered fruit look. But, I know sometimes we are busy. Another recipe option is listed for you as well that includes the fresh fruit right in the popsicle. No extra steps. Just fresh fruit + the simple syrup + straight in the freezer they go.

If you're going to make your own popsicles, might as well include some cheery popsicle sticks, right? Maybe in Dad's favorite color? Maybe in your child's favorite design? Maybe just something unique that makes you smile? Stop by your favorite craft store to find a fun set of unique popsicle sticks.

Fresh Fruit Popsicles with Tropicana® Fresh

Ingredients:

Simple Syrup:

1 1/2 Cup Cold Water

1 Cup Hot Water

1/2 Cup Sugar

2 Tbsp Agave Nectar

2 Tbsp Fresh Lemon Juice

Fresh Fruit:

1 Cup Fresh Grapefruit (1 large grapefruit)

1 Cup Fresh Oranges (1-2 oranges)

1 Cup Fresh Pineapple (1 medium pineapple)

1 Cup Fresh Mandarins (approximately 10 mandarins)

Real fruit popsicle recipe

Directions:

First, create the simple syrup on the stove top. In a medium sized pan, add 1 cup water. Bring to a boil. Next, add 1/2 cup sugar. Stir until dissolved. Then, add 2 tbsp agave nectar. Stir until dissolved. Then, add 2 tbsp fresh squeezed lemon juice. Next, add 1 1/12 cup cool water. Stir + set aside. 

To create the fresh fruit popsicles with fresh fruit suspended in the simple syrup, begin slicing the fruits into small pieces. Peel the mandarins + set aside. Section the grapefruit + oranges + peel off the membranes. While sectioning the grapefruit, reserve 1/4 cup fresh grapefruit juice that can be squeezed out of the fruit remaining on the skin. Slice the pineapple into small pieces. Next, Place the fresh fruit into the popsicle molds. Alternate the fruits. Fill about halfway, then add the popsicle sticks. Next, place the remaining fruit around the sticks. Then, add the reserved grapefruit juice to the simple syrup. Stir. Finally, pour the simple syrup into the molds + freeze. Freeze for 4 hours or overnight. 

To create the layered fresh fruit popsicles, begin peeling + slicing the fruits. Create the simple syrup listed above + set aside. Have your blender ready, and peel your fruit over your blender to catch any extra juice. Prepare the fruit by both squeezing the fresh fruit + adding whole fruit chunks. Each layer of fruit will be prepared separately. Yet, the process remains the same. Measure about 1 cup of fresh fruit into the blender. Peel and juice 1 cup of fresh oranges. Add to blender. Add 1/2 cup simple syrup. Blend on medium for 1 minute. Then, pour a small layer into the popsicle mold + place into the freezer for 3 hours or longer. Pour remaining orange mixture into a sealed container + place in the refrigerator. Repeat with grapefruit, pineapple + mandarins. Place each of the mixtures into sealed containers in the refridgerator so they will be ready to add a new layer once the previous layer has frozen. Fill some layers thin + some thick for a cheery look. Once the popsicle mold is filled halfway, add the popsicle sticks into the mixture to freeze into the popsicle. Continue to add the fresh fruit mixtures until the molds are filled. Enjoy!

This recipe yields approximately 12 popsicles. There are various sized popsicle molds available + it is fun to create different sizes + shapes!

Whether you make your fresh fruit popsicles with layers or with the fresh fruit suspended into the simple syrup, they are surely to be enjoyed by all. Maybe the kids enjoy while drawling with sidewalk chalk or the adults enjoy paired with a cocktail. Just make sure to pair the popsicles with some great conversation.

Vegan Cilantro Green Sauce

Ingredients:

2 cups (or 1 bunch) fresh cilantro (with stems)

1/2 cup oil of choice (Olive oil or avocado oil)

1/2 fresh garlic clove

1 tbsp fresh lime juice

1 tsp salt

1 tsp black pepper

Directions:

Add all ingredients into a food processor. Blend on medium for 1 minute. Pour over your favorite dish. Enjoy!

Gluten Free Gingerbread House with Enjoy Life Foods

It is so much fun to make a Gingerbread house during the Christmas season. But, most Gingerbread house kits in the stores contain gluten, wheat, eggs + often warnings that the treats may contain peanuts, tree nuts + other allergens. Well, that can take all the fun out of gingerbread making for families with food allergies. So, I created a gluten free gingerbread house recipe with more nutritious ideas for the decorations as well.

My kids love to snack while making a gingerbread house, which is really fun. But, honestly, I aim for nutritious snacks over sugary sweets. They had their fare share of powdered sugar intake during the making of our gingerbread house, but the Enjoy Life Foods Seed + Fruit Mix was a big, nutritious hit! We went for a cottage look + covered our house with sunflower seeds, pumpkin seeds + dried pineapple. All of the Enjoy Life products are certified gluten-free + free-from the top 8 most common allergens as defined by the FDA (wheat, dairy, soy, eggs, peanuts, tree nuts (including coconut), fish and shellfish). They are also all verified Non-GMO, certified Kosher and Halal, and are made with no artificial ingredients. Gluten Free Gingerbread House Ingredients:

1 Box Enjoy Life Foods Gluten Free All Purpose Flour (4 cups)

2/3 Cup Rice Milk

1/2 Cup Molasses

1/2 Cup Vegetable or Palm Oil Shortening

1/2 Cup Cinnamon Applesauce

1/2 Cup Sugar

2 Tablespoons Baking Powder 

1 Tablespoon Fresh Ground Ginger

1 Tablespoon Cinnamon

1/4 Tsp Allspice

1/2 Tsp Salt

Gingerbread House Decorations:

Enjoy Life Seed + Fruit Mix

Cranberries

Cinnamon Sticks

Candy Canes (Organic, nut free, kosher)

Sugar + Confectioner's Sugar for dusting

Non-food Decorations:

Wreaths

Bottle Brush Trees

Beaded garland or Mini Christmas Lights

Cardboard

Gingerbread House Frosting:

1 Cup Confectioner's Sugar

1 Tablespoon Water or Rice Milk

Gluten free Gingerbread house

Directions:

Melt shortening in a saucepan. Add sugar + molasses + mix well, with sugar fully dissolved. Sift together in a mixing bowl: flour, baking soda, nutmeg, allspice, cinnamon, salt + ginger. Gradually stir 4 cups of the dry ingredients into the melted shortening mixture. Mix in rice milk + applesauce. Mix thoroughly. Transfer to a bowl + refrigerate for 4 hours or over night.

Place baking sheet on workspace. Line with parchment paper. Roll out dough. You may put a piece of parchment paper on top of the dough for ease of rolling. Cut Gingerbread house pieces. I found this Gingerbread cookie cutter set on Amazon, just search "Gingerbread cookie cutter." Trim + smooth up sides with a knife. Remember to cut your doors + windows prior to baking. Remove excess dough + roll out to cut additional pieces. Bake at 350 for 10 - 12 minutes. Cool on baking rack.

For the frosting: mix 1 Cup confectioner's sugar to 1 Tablespoon water or rice milk. When creating your Gingerbread house, you can apply your frosting with a knife, spoon, piping bag, Ziplock bag with the corner cut off, or generic ketchup bottle from a cooking store or The Dollar Tree.

Place a piece of cardboard on your workspace to build your Gingerbread house. With your frosting, glue your house directly onto the cardboard. Glue the walls, one at a time + let it dry for a few minutes before adding the next piece. You can use cans of vegetables to hold up your walls while drying. 

To re-create this design, line the bottom edge of the house with fresh cranberries. Then, start from the bottom + work your way up + spread the frosting on the wall then place in the sunflower seeds, pumpkin seeds + dried pineapple to look like a cobblestone or brick wall. Work in small sections until complete. Decorate the roof + let dry before adding it to the house. For the roof: spread with frosting + sprinkle on candy cane crumbs + fine sugar. Add wreaths + trees as you wish. Sprinkle confectioner's sugar + fine sugar on your cardboard to create snow. Cheers!
