A good starting point for eating or drinking more plants are smoothies. But, where do you go from there? Are there any other ways to use Silk Almondmilk other than in smoothies? Well, here is a savory recipe that allows you to continue using your Silk Almondmilk throughout the day.

Ingredients:

1 Cup Spiralized Zucchini

1 Cup Spiralized Sweet Potato

1 Cup Spiralized Beets

½ Cup Pomegranate Seeds

½ Cup Sliced Heirloom Tomatoes

¼ Cup Chopped Leeks

¼ Cup Chopped Cilantro


1 Cup Almond Butter

½ Cup Silk Almondmilk

2 Tbsp Hemp Seeds + more for garnish

1 Tsp Garlic Salt

2 Tbsp Olive Oil

1 Tbsp Black Pepper

1 Tsp Red Pepper Flakes

Directions:

Spiralize zucchini, sweet potatoes + beets. Or, purchase the veggies pre-spiralized as a time-saver. Saute zucchini with olive oil in a frying pan on medium-high heat until golden. Continue to saute the sweet potatoes + beets.

In a pot, add almond butter + Silk Almondmilk. Stir over medium heat. Add olive oil, garlic salt, black pepper + red pepper. Continue to stir until well combined. Add in hemp seeds.

Prepare with the sauteed zoodles in a bowl, scoop Almond sauce onto the dish. Garnish with: heirloom tomatoes, leeks, cilantro, pomegranates + extra hemp seeds.

Simple Granola Bites Recipe:

Ingredients:

2 Cups Oats or Granola -We used New England Berry Granola

1 Cup Nut or Seed Butter -We used WOW Butter

1/4 Cup Local Honey (Substitute Honey for Agave Nectar for a Vegan recipe)

Directions:

Pour the granola into a large mixing bowl. Heat the nut butter/Seed butter/WOW butter in the microwave in a glass bowl for 30 seconds, then pour over granola. Pour honey into mixing bowl. Next, combine all ingredients. Form into balls and place in paper cupcake liners. Boom, simple + fun. Plus, nutritious.

          10oz frozen mango (1 package)

          32oz Unsweetened Cashew NDB

          1/2 teaspoon ground cardamom

          3 Tablespoons Agave

          2 cups ice

Combine all ingredients in a blender + blend on medium high. Serve with your favorite paper straw. Enjoy!

Hummus Recipe with American Gluten Free + San Francisco Salt

Looking for a refreshing, plant-based recipe this spring? We've got you covered. Here, I'm sharing a super easy Hummus recipe with American Gluten Free + San Francisco Salt Co.

I love that hummus is a nutritions + quick recipe that can feel rich + satisfying as well. The lemon juice + Himalayan Salt sure is a way to top it off.

Homemade Hummus Ingredients:

3 Cans of Chick Peas

1 Can of Reserved Water from the Chick Peas

2 Cloves Roasted Garlic

3 Tbsp Hemp Seeds

2 Tbsp Fresh Lemon Juice

2 Tbsp Olive Oil

1 Tbsp Paprika

1/2 Tbsp Himalayan Salt

1/2 Tbsp Black Pepper

Directions:

Drain 2 cans of chick peas. Add to blender. Add addition can of chick peas with reserved water to the blender.

Roast 8 cloves of garlic in a frying pan with 1 Tsp olive oil over medium heat. Continue to turn with a spatula  until toasted. Add garlic cloves to blender.

Juice one lemon. Reserve 2 Tbsp fresh lemon juice. Add to blender.

Add Olive Oil, Paprika, Salt + Black Pepper to the blender. Blend on medium high until a smooth consistency is achieved. Scoop out into a reusable container. Top with a dash of olive oil, paprika, lemon juice + Himalayan Salt

Loaded Vegan Baked Potato Recipe

Where are all my busy moms at?! *Me raising both of my hands!* I have some baked potatoes here to help save the day. Sometimes I forget about the convenience of baked potatoes. Incase you've forgotten too, I have a loaded vegan baked potato recipe for you.

Loaded vegan baked potato recipe with Lindsey Lee & Co.

I love baked potatoes because they are naturally gluten-free + they can easily be made dairy-free with olive oil or avocado oil. I also love baked potatoes because they can be made ahead + keep well as a left-over. 

Baked potato recipe with roasted veggies and walnuts. Vegan baked potato

Loaded Vegan Baked Potato Recipe

Ingredients:

5 lb Bag of Russet Potatoes

2 Bunches of Radishes

1 lb of Brussel Sprouts

2 Cups of Walnuts

1 Bunch Rainbow Carrots

1 Cup of Crinkle Cut Carrots

Olive Oil or Avocado Oil

Truffle Salt to Taste

Aluminum Foil

Directions:

Wash + scrub all of the potatoes. Carefully pierce around the potato with a fork or sharp knife. Tear sheets of aluminum foil + place in a pile. Brush oil on the skins of the potatoes + lightly sprinkle with truffle salt. Place the aluminum covers potatoes on a baking sheet. Preheat over to 395. Bake at 380 for 50 minutes. Check on the potatoes + bake for an extra 10 minutes if needed. Let cool. 

Wash the vegetables. Lightly toss with oil + truffle salt. Place in a glass baking dish. Add the walnuts + mix in with the vegetables. Bake on the bottom rack at 380 for 20 minutes. Broil on low for 5 minutes if you would like the vegetables extra crispy. 

Top your potato with the roasted vegetables + walnuts. Mix up your toppings throughout the week to freshen up your left-overs. Cheers!

The roasted walnuts really bring something special to this meal. I've spent the past 3 1/2 years strictly avoiding nuts due to my son, Bowan's life threatening allergies to tree nuts + peanuts. We truly were shocked to learn through skin + blood testing as well as through hospitalized Oral Food Challenges that Bowan has outgrown tree nuts + peanuts that once gave him hives just from coming in contact with a granola bar wrapper or playground equipment. As a vegetarian, nuts used to be a big part of my diet. So, now we are working them back into our lives. I am still focusing on allergy friendly recipes while also honestly including some new foods that we can safely have in our home + in our bodies.

Valentine's Day Chocolate Covered Apples with Enjoy Life

Ingredients:

2-5 Apples

1 Bag Enjoy Life Mini Chips

1 Small Watermelon

1 Lemon

Sugars + Sprinkles of your choice

 

Parchment Paper

Mini heart-shaped cookie cutters

Optional: Plastic red + white tooth picks

 

Directions:

Wash + dry 2-5 apples. Cut into thin slices working from the outside, in. Cutting from four sides, like a cube. Wash + cut the lemon into slices. Squeeze the lemon juice into a medium bowl. Place the apple slices in the bowl of lemon juice, stir to coat all of the apple slices. The lemon juice helps to keep the apples from browning!

Place the apple slices flat on a cutting board. Press heart shaped mini-cookie cutters into the apples. Snack on the excess apple pieces! I wont tell! Place the heart cut-outs flat onto a cookie sheet lined with parchment paper. 

Wash the mini watermelon. Cut in 1/2. Then, cut into slices. place the watermelon slices flat on a cutting board + cut into heart shapes. Place the heart cut-outs flat onto a cookie sheet lined with parchment paper. 

Pour 1/2 a bag of Enjoy Life Mini Chips into a microwave safe bowl. Microwave at 30 second increments + stir. Continue to heat + stir until the chocolate is completely melted. 

With a spoon or butter knife, drizzle chocolate onto the apple + watermelon hearts. Top with your favorite sprinkles + sugars.

Easy Dill Sauce Recipe with a Quinoa & Brown Rice Family Dinner with Path of Life

I'm always looking to make dinner prep time a little easier. One of my life savers is the brand Path of Life. I love short-cuts, but I still want to eat "clean," natural + simple. Here, I'm sharing how this brand can help make your meal prep simpler. Plus, keep reading for a really delicious Fresh Dill Sauce to round out a full dinner for your family .

Easy family dinner with a fresh dill sauce recipe

Path of Life offers 6 organic + natural microwavable side dishes. I used the Brown Rice & Quinoa variety here. But, there are some other really delicious dishes, like: Southwest Quinoa, Mediterranean Quinoa, Superfood Pilaf + more. They are all ready in 4 minutes. Just pop in the microwave, chop some veggies or throw your sauce ingredients in the blender + multi-task while this dinner side is cooking.

I have grown to love cooking. But, I do not love all the dirty pots + pans. Honestly, I often need to clean my stock pot from the night before just so it's ready to make dinner again. Fresh Dill Sauce

Ingredients:

1 Cup Fresh Dill

1/2 Cup Chopped Leeks

1/2 Cup Macadamia Nut Oil

Juice of 1/2 a Lemon

2 Tablespoons Hemp Seeds

2 Tablespoons Brown Rice Syrup

1/2 Teaspoon Truffle Salt

Modifications: For a tree nut allergy substitute Macadamia Nut Oil for Avocado, Grapeseed or Olive Oil

Fresh Dill Sauce Directions:

Wash + rince 1 cup of fresh dill. Hey, grab it from your windowsill if this is a herb you grow! Place the dill in your blender. Chop 1/2 cup of leeks, rinse + add to blender. Measure + pour 1/2 cup of macadamia nut oil into the blender. Squeeze the juice of 1/2 a lemon into the blender. Measure + pour into blender: hemp seeds, brown rice syrup + truffle salt. Blend on medium for 30-60 seconds, then pour into a small serving dish.

Easy Dill Sauce with Quinoa & Brown Rice Family Dinner

Ingredients:

1 - 2 bags of Path of Life Organic Quinoa & Brown Rice

1 batch of Fresh Dill Sauce

1 can of Garbanzo beans, strained

1/2 head of cabbage, chopped

Optional: sliced almonds, pumpkin seeds, walnuts or sunflower seeds for topping

Optional: dairy or non-dairy cheese for topping

Directions:

Microwave the Path of Life Organic Quinoa & Brown Rice pouch, while blending the Fresh Dill Sauce in the blender. Open + strain 1 can of garbanzo beans. Chop 1/2 head of cabbage. After the pouches are microwaved, let stand. Then, place in a sauce pan with 2 tablespoons of the fresh dill sauce + lightly sauté. Or, just stir the sauce in and forget that dirty pan! Plate your dish with the quinoa & rice blend, topped with chopped cabbage, garbanzo beans tossed in the fresh dill sauce + a side of the fresh dill sauce. Top with optional toppings such as: sliced almonds, pumpkin seeds, walnuts, sunflower seeds, parmesan cheese or cashew cheese.

Apple Cinnamon Chia Seed Pudding with Good Karma Flaxmilk

Ingredients:

4 Cups Good Karma Flaxmilk Original

1 1/2 Cup Chia Seeds

3 Tbsp Confectioner's Sugar

1 Tbsp Cinnamon

1 Tbsp Agave Nectar

1/4 Tsp Vanilla Extract

3 Apples Cored and Sliced

Additional Cinnamon + Confectioner's Sugar for topping.

Directions:

Combine Good Karma Flaxmilk + Chia Seeds. Stir well until combined. Next, add confectioner's sugar, cinnamon, agave nectar + vanilla. Stir into the pudding + divide into cups. Cover + refrigerate over night. 

Enjoy chilled or microwave for 30 to 60 seconds. Top with freshly sliced apples + sprinkled confectioner's sugar + cinnamon. 

 

Adaptation for young children/baby led weaning: Combine the Good Karma Flaxmilk, chia seeds, agave nectar + vanilla.  Reserve 1/2 cup of the mixture. Then, add the confectioner's sugar and cinnamon to be enjoyed by the big kids + adults!

The secret ingredient? Grilled peaches. Yep, the grilled peaches give it an unsuspecting kick. Fresh, hearty, sweet, yet not too sweet with the balance of the Canyon Bakehouse bread + the layers of sunflower seed spread.

Ultimate Back to School Sammie with Canyon Gluten Free

Ingredients:

2 Slices of Canyon Bakehouse Mountain White

1/2 Cup Fresh Strawberry Slices

1 Fresh Peach, cut into thin slices

4 Tbsp 88 Acres Chocolate Sunseed Spread

1 Tbsp Olive Oil

Directions:

Wash + slice the peach. Pour olive oil into a frying pan. Turn heat to medium high. place peaches in the pan with a coat of olive oil. Grill + flip so both sides are nice + toasty. Remove from pan + let cool. Make sure the peaches completely cool before the sandwich is packed in a lunchbox.

Next, wash + slice strawberries. Slice extra for snacking. 

Place 4 Tbsp Chocolate Sunseed Spread in a small glass bowl. Heat in the microwave for 15 seconds to help it melt a little so it will spread on smooth + evenly. Spread a layer of Chocolate Sunseed Spread on the inside of both pieces of Canyon GF Bread

Next, place the bottom piece of bread on a plate, bread side down. Place a lawyer of strawberry slices on the bread. Then, place a layer of grilled peaches, topped with a second layer of strawberries. And, completed with the final piece of Canyon GF Bread with the Chocolate Sunseed spread.

This twist on the typical lunchtime sandwich is a fun way to brighten up a lunchbox. Perfect for both kids + adults, alike. 

Directions:

Lay a BFee Quinoa + Chia Seed wrap flat on a cutting board. Spread a layer of Sunflower Seed Spread. Next, spread a layer of jelly. My kids like a layer of both raspberry + blueberry jelly! Next, add fresh fruit. Add fruit like: blueberries, banana slices, strawberries, raspberries, pomegranate seeds peach slices or apple slices. Add what is in season, what you have on hand, or try something new. For younger kids, or kids that aren't quite ready for lots of texture or large chunks of fruit, cut the pieces much smaller before placing on the tortilla. Next, take a pizza cutter and cut 1 1/2 inch strips down the tortilla. Then, roll up and place in a bento box. Enjoy!

Gluten Free Pitas with Homemade Hummus + Fresh Veggies

This light + fluffy pita bread sandwich is a hit. I could eat this everyday. A grown ups favorite, yet it can be perfectly modified for the pickiest of kids. 

Homemade Hummus Ingredients:

3 Cans of Chick Peas

1 Can of Reserved Water from the Chick Peas

2 Cloves Roasted Garlic

3 Tbsp Hemp Seeds

2 Tbsp Fresh Lemon Juice

2 Tbsp Olive Oil

1 Tbsp Paprika

1/2 Tbsp Salt

1/2 Tbsp Black Pepper

Directions:

Drain 2 cans of chick peas. Add to blender. Add addition can of chick peas with reserved water to the blender.

Roast 8 cloves of garlic in a frying pan with 1 Tsp olive oil over medium heat. Continue to turn with a spatula  until toasted. Add garlic cloves to blender.

Juice one lemon. Reserve 2 Tbsp fresh lemon juice. Add to blender.

Add Olive Oil, Paprika, Salt + Black Pepper to the blender. Blend on medium high until a smooth consistency is achieved. Scoop out into a reusable container. Top with a dash of olive oil, paprika + lemon juice.

Gluten Free Pitas with Homemade Hummus + Fresh Veggies Directions:

Spread homemade hummus onto the inside bottom of a BFree pita. (For kids that don't yet like big chunks of vegetables, stir small diced veggies into the hummus). Next, top hummus with fresh chopped veggies, such as: rainbow carrots, radishes, cucumber, onions, olives + arugula. Spread your favorite salad dressing onto the top inside of the pita bread. Enjoy!

Pizza is always a favorite, but this is a great portable way to bring it along in a lunchbox!

Directions:

Place a BFree Multigrain Wrap onto a pizza pan. Next, spread pizza sauce onto the wrap. Then, sprinkle cheese or dairy-free cheese onto the sauce. (For kids that don't yet like big chunks of vegetables, chop mushrooms, olives, peppers, fresh basil, arugula, + kale into tiny pieces + mix into the cheese before sprinkling on the wrap). For adults that love the fresh veggies, pile them on! Bake at 350 degrees for 8 minutes or until golden brown. Remove from oven + let cool. Next, use a pizza cutter and cut 1 1/2 inch strips down the tortilla. Then, roll up and place in a bento box. Add fun pics to bring some cheer + to keep the roll-ups together. Enjoy!

2 Cups So Delicious Oregon Berry Coconut Frozen Dessert

3/4 Cups Dairy-free Chocolate chips

7 Tbsp freeze dried Dragon Fruit powder

1 Tbsp So Delicious Vanilla Coconut Milk

1 Tbsp dairy-free butter

9 Inch Pie Pan

Dairy Free Ice Cream Pie: 5 Layer Dragon Fruit Coconut Ice Cream Pie with So Delicious

Dairy-free 5 Layer Coconut Dragon Fruit Ice Cream Pie

Directions:

First, place 3 cups of your favorite dairy-free brownie bites into a blender. Melt 1 Tbsp on vegan butter in the microwave for 30 seconds. Next, pour into the blender. Blend on high until it becomes a smooth mixture. Press the brownie crust into a 9 inch pie pan with removable sides. 

Next, wash out you blender. Then, add the 2 Cups So Delicious Chocolate Coconut Frozen Dessert into the blender. Blend on medium so the frozen dessert becomes smooth. Spread the chocolate frozen dessert on top of the crust. Freeze for 30 minutes or overnight. 

Next, place a medium sauce pan on the stove top. Add 3/4 Cups Dairy-free Chocolate Chips + 1 Tbsp So Delicious Vanilla Coconut Milk. Stir over medium heat until the chocolate ships are melted + smooth. Pour the chocolate ganache mixture over the frozen chocolate dessert in the pie pan. Freeze for 1 hour or overnight. 

Next, add 2 Cups So Delicious Vanilla Coconut Frozen Dessert into a clean blender. Blend on medium so the frozen dessert becomes smooth. Spread the vanilla frozen dessert on top of the crust. Freeze for 30 minutes or overnight. 

Next, add 2 Cups So Delicious Oregon Berry Coconut Frozen Dessert + 7 Tbsp Dragon Fruit concentrate into a clean blender. Blend on medium so the frozen dessert becomes smooth. Spread the frozen dessert mixture on top of the crust. Use a fork to create swirls in the frozen dessert topping. Freeze overnight. Enjoy!

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Maraschino cherries are my favorite vegan ice cream topping. Rather than just having the cherry on top, these popsicles are filled with super sweet marachino cherry juice. I'm sharing this vegan cherry coconut popsicle recipe with So Delicious Dairy Free with you here on the blog.

Ok, I need to be honest with you. These popsicles are so good that I got a straw + tried to drink this melted juice off of the cutting board. I know, that sounds desperate. Desperate times call for desperate measures + I just didn't want to see this sweetness go to waste.

I love feeding my family So Delicious Dairy Free products because they use state of the art allergy testing to make sure each batch is free of major allergens that aren't included in the ingredients. My son, Bowan, has multiple food allergies + I like to know what I'm feeding him. Trace amounts of allergens could cause him to have a reaction. I want to enjoy our ice cream rather than worry about his safety based on a brand of food I chose to buy. Also, we don't go out to ice cream shops because... peanuts, everywhere... The last time I was in an ice cream shop, two years ago, I looked back at the counter + floor + there really were peanuts all over the place. So, we use trusted So Delicious + enjoy our vegan ice cream at home.

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Ingredients:

2 Cups So Delicious Coconut Milk Dairy-Free Frozen Dessert

3/4 Cup Maraschino Cherry Juice

1/4 Cup Confectioner's Sugar

1/4 Cup So Delicious Original Coconut Milk Beverage

Vegan Cherry Coconut Popsicles with So Delicious Dairy Free

Directions:

Measure all ingredients + pour into blender. Blend on high for 1 minute. 

Next, drink it straight out of your blender pitcher. Just kidding. Well, actually, I really did do that. 

Next, pour into popsicle molds. Place in the freezer. Freeze for 15 minutes. Then, add popsicle sticks + place sprinkles on the top opening of the popsicle. Freeze overnight. 

Enjoy!

Lavender Lemonade Recipe

It's HOT here in Denver this summer + I have a lavender lemonade recipe to help cool you down. This refreshing combo of lavender + lemon will help you beat the heat.

Lavender Lemonade Recipe

Ingredients:

5 1/2 Cups Water

1/2 Cup Fresh Squeezed Lemon Juice

7 Tablespoons Agave Nectar

1 Cup Lavender Water:

           3 Tbsp Dried Lavender

           2 Cups Water

Lavender Lemonade Recipe

Directions:

Juice 2 to 3 lemons to yield 1/2 cup fresh lemon juice. Bring 3 cups water to a boil in a stock pot. Add agave nectar + lemon juice, stir until dissolved. Add 2 1/2 cups cool water. Let cool.

In an additional pot, bring 2 cups water to boil. Place a fine strainer over the pot, in the water. Place 3 Tbsp dried lavender in the strainer. Steep for 10-15 minutes. Reserve 1 cup lavender water. 

Add 1 cup lavender water to the lemonade mixture. Let cool. Transfer to a pitcher + refrigerate. Enjoy!

This recipe features a layered fruit look. But, I know sometimes we are busy. Another recipe option is listed for you as well that includes the fresh fruit right in the popsicle. No extra steps. Just fresh fruit + the simple syrup + straight in the freezer they go.

If you're going to make your own popsicles, might as well include some cheery popsicle sticks, right? Maybe in Dad's favorite color? Maybe in your child's favorite design? Maybe just something unique that makes you smile? Stop by your favorite craft store to find a fun set of unique popsicle sticks.

Fresh Fruit Popsicles with Tropicana® Fresh

Ingredients:

Simple Syrup:

1 1/2 Cup Cold Water

1 Cup Hot Water

1/2 Cup Sugar

2 Tbsp Agave Nectar

2 Tbsp Fresh Lemon Juice

Fresh Fruit:

1 Cup Fresh Grapefruit (1 large grapefruit)

1 Cup Fresh Oranges (1-2 oranges)

1 Cup Fresh Pineapple (1 medium pineapple)

1 Cup Fresh Mandarins (approximately 10 mandarins)

Directions:

First, create the simple syrup on the stove top. In a medium sized pan, add 1 cup water. Bring to a boil. Next, add 1/2 cup sugar. Stir until dissolved. Then, add 2 tbsp agave nectar. Stir until dissolved. Then, add 2 tbsp fresh squeezed lemon juice. Next, add 1 1/12 cup cool water. Stir + set aside. 

To create the fresh fruit popsicles with fresh fruit suspended in the simple syrup, begin slicing the fruits into small pieces. Peel the mandarins + set aside. Section the grapefruit + oranges + peel off the membranes. While sectioning the grapefruit, reserve 1/4 cup fresh grapefruit juice that can be squeezed out of the fruit remaining on the skin. Slice the pineapple into small pieces. Next, Place the fresh fruit into the popsicle molds. Alternate the fruits. Fill about halfway, then add the popsicle sticks. Next, place the remaining fruit around the sticks. Then, add the reserved grapefruit juice to the simple syrup. Stir. Finally, pour the simple syrup into the molds + freeze. Freeze for 4 hours or overnight. 

To create the layered fresh fruit popsicles, begin peeling + slicing the fruits. Create the simple syrup listed above + set aside. Have your blender ready, and peel your fruit over your blender to catch any extra juice. Prepare the fruit by both squeezing the fresh fruit + adding whole fruit chunks. Each layer of fruit will be prepared separately. Yet, the process remains the same. Measure about 1 cup of fresh fruit into the blender. Peel and juice 1 cup of fresh oranges. Add to blender. Add 1/2 cup simple syrup. Blend on medium for 1 minute. Then, pour a small layer into the popsicle mold + place into the freezer for 3 hours or longer. Pour remaining orange mixture into a sealed container + place in the refrigerator. Repeat with grapefruit, pineapple + mandarins. Place each of the mixtures into sealed containers in the refridgerator so they will be ready to add a new layer once the previous layer has frozen. Fill some layers thin + some thick for a cheery look. Once the popsicle mold is filled halfway, add the popsicle sticks into the mixture to freeze into the popsicle. Continue to add the fresh fruit mixtures until the molds are filled. Enjoy!

This recipe yields approximately 12 popsicles. There are various sized popsicle molds available + it is fun to create different sizes + shapes!

Whether you make your fresh fruit popsicles with layers or with the fresh fruit suspended into the simple syrup, they are surely to be enjoyed by all. Maybe the kids enjoy while drawling with sidewalk chalk or the adults enjoy paired with a cocktail. Just make sure to pair the popsicles with some great conversation.

Gluten Free Veggie Burgers

I'm all about simple baking. I'm all about getting more veggies into traditional foods. Here, I'm sharing a fun twist on the veggie burger that's also gluten free. These veggie burgers are perfect on the Canyon Bakehouse gluten free buns.

These veggie burgers are filled with veggies! The best way to go. So, naturally these veggie burgers are soy + gluten free. Both soy + gluten can often lurk in veggie burgers. These burgers are made with both raw veggies + baked veggies. They are warm + toasty, yet crunchy with the fresh veggies.

Gluten Free Veggie Burgers:

Raw Veggies:

Red Onions

Tomatoes on the vine

Avocado

Yellow Peppers

Orange Peppers

Veggies to Bake:

Sweet Potatoes

Red Beets

Medium sized Portobello Mushrooms

Cumin

Garlic Salt

Olive Oil or Avocado Oil

Buns:

Directions:

Slice up the fresh veggies + set out on a platter or small individual plates. 

Skin + Slice a large sweet potato + a large beet. Line a baking sheet with parchment paper. Drizzle olive oil + sprinkle cumin + garlic salt onto the parchment paper. Dip the sweet potatoes  + beet slices into the oil + spices + arrange on the paper. Wash the portobello mushrooms + line on the parchment paper as well. Bake at 375 degrees for 25 minutes. Flip after 12 minutes. Remove the beets + mushrooms from the pan + please the sweet potatoes back in. Broil the sweet potatoes on low for 5 minutes. 

Toast the Canyon Gluten Free buns in a toaster over for a short time just to get them a little crispy. 

Pile the veggies high on the buns + enjoy. Top with your favorite balsamic dressing. Cheers.
