And, on busy days it’s the perfect stand-by for dinner, too.  Include your kids in a granola bar and enjoy conversations over a simple dinner or brunch.  Offer a variety of fruit alongside the granola to allow your kids to choose their own toppings. Offer a variety of seeds and nuts as well to up the protein value of the meal.

Apple Cinnamon Granola with So Delicious®

Ingredients:

3 ½ Cups Gluten Free Oats

1 Cup Crushed Pecans (Substitute Pumpkin Seed Pepitas for Tree Nut Allergy)

½ Cup Shredded Coconut

1 Tablespoon Cinnamon

½ Teaspoon Salt

½ Cup Coconut Oil

¾ Cups Maple Syrup

1 Tablespoon Vanilla

1 Large Apple, Diced

Directions:

Preheat oven to 350 degrees.

Wash a large apple, dice into small pieces.

Mix gluten free oats, pecans, shredded coconut, diced apple and cinnamon in a large bowl. Set aside.

In a microwave safe bowl, combine coconut oil, maple syrup, salt and vanilla. Microwave the ingredients for 30 seconds and stir. If needed, microwave an additional 30 seconds.

Pour liquid mixture over dry mixture and stir.  

Place parchment paper over a baking sheet. Spread mixture over parchment paper. Bake for 10 minutes at 350 degrees.

Stir and bake an additional 10 minutes.
