Green Goodness Cilantro Sauce

This cilantro dressing is a favorite in my family. The sauce is light + refreshing. Yet, full of flavor + a great addition to a meal. We love this cilantro sauce over rice, but it is also great as a salad dressing + over roasted vegetables. If you're eating clean, this is for you! If you have allergies other than the top 8 allergens, this is for you!

Over this past year, my son had multiple IgE mediated food allergies to foods other than the top 8 food allergens. Once his multiple allergies were diagnosed, this dressing became a staple because I was able to make this sauce free of the allergens that are found in many dressings + sauces. He had allergies to mustard seed + garlic, among others, which are very difficult to avoid in prepared dressings. Because mustard seed + garlic are not top 8 allergens, they are not required to be labeled, they can be listed as "spices" or "natural flavors." Thankfully, my son has already outgrown the garlic + mustard seed allergies. He still has multiple food allergies, but the list has been growing shorter. If you have a garlic allergy, this dressing is still great without the garlic. You can make this dressing as listed below while just omitting the garlic, or by also adding additional lime juice or pepper. 

 

Cilantro yogurt sauce

Green Goodness Cilantro Sauce 

Ingredients:

1 bunch cilantro (1 cup) stems removed

1/2 cup plain yogurt, use coconut yogurt for a top 8 free version

1/4 cup olive oil

Juice of 1 lime

1 clove garlic *omit for garlic allergy

2 tablespoons apple cider vinegar

1 teaspoon Himalayan salt

1/2 teaspoon pepper

Directions:

Wash + stem the bunch of cilantro. Place directly into your blender (use less bowls + have less of a clean-up)! Measure yogurt + olive oil + pour into blender. Cut the lime into slices + squeeze juice into blender. Cut additional lime wedges for garnish with your meal. Peel garlic + place into blender. Measure + add apple cider vinegar, Himalayan salt + pepper. Blend on medium until the mixture is uniform.  Serve chilled.
