Almond Veggie Bowl with Silk® Almondmilk

Veggie bowls make the plant-based world go round. And, here's a way to simply add more veggies to your day with a hearty sauce that’s sure to fill you up. This plant-based recipe is entirely raw, so no dirty pots or pans required here. The fresh blackberries from Sprouts Farmers Market® give this dish a surprising pop. Plus, the shelf stable Silk® Almondmilk is a must to have on hand to whip this sauce together at a moment's notice.

It seems like I’m always filling my sink to the brim with dirty dishes. Great news: this recipe requires minimal dishes + no pots or pans. Just a nice large bowl for your meal, a cutting board, Inspriliarilizer + blender. If you have some extra time, chop + spiralize some extra veggies so you have some grab + go meals later in the week.

If you eat all this sauce the first time around, I won’t tell! But, this sauce is perfect to make ahead for simple meals. You may even want to try this sauce on toast, pasta, rice, salad or sautéed veggies.

Almond Veggie Bowl with Silk® Almondmilk

Almond Sauce Ingredients:

¼ Cup Silk® Shelf-Stable Original Almondmilk

½ Cup Almond Butter

2 Tbsp Hemp Seeds

¼ Cup Coconut Aminos

Juice of ½ a lime

1 Tbsp Apple Cider Vinegar

Pinch Crushed Red Pepper

Directions

Add all ingredients to a blender. Blend on medium until well combined. Enjoy!

Fresh Veggie Bowl Ingredients:

3 Packages Fresh Organic Blackberries from Sprouts Farmers Market®

2 Italian Zucchini Squash

2 Yellow Zucchini Squash

1 Large Avocado

1 Bag Multi-Colored Carrots

1 Can Chickpeas

Directions: 

Thoroughly wash all veggies. 

Spiralize the Italian Zucchini Squash + Yellow Zucchini Squash.

Slice carrots into small coins. 

Strain and rinse the can of chickpeas.

Slice the avocado. 

Arrange all of the veggies into a large bowl. Generously pour the Almond Sauce onto the dish. Enjoy!
