Vegan Blackberry Pastries


Ingredients:


Pastry Ingredients:

4 Cups Gluten-free Flour containing Xanthan Gum

1 ½ Cup Vegan Butter

10 Tbsp So Delicious® Dairy Free unsweetened coconutmilk

6 Tbsp Cane Sugar

2 Tbsp Almond Extract

1 Tsp Pink Himalayan Salt 

Jam Ingredients:

4 Cups Organic Blackberries from Sprouts Farmers Market®

2 Cups Cane Sugar

2 Tbsp Lemon Juice

2 Tbsp Cornstarch

Glaze Ingredients:

2 Cups Confectioner’s Sugar

2 Tbsp So Delicious® Dairy Free unsweetened coconutmilk

1 Tbsp Pure Vanilla

2 Tbsp reserved Blackberry Jam

Directions: 

Pastry Directions:

Add to a blender + blend on medium high until well combined: gluten-free flour, pink Himalayan

salt and cane sugar. Blend in small chilled pieces of the vegan butter. Blend in So Delicious®

Dairy Free unsweetened coconutmilk and almond extract.

Place dough on a baking sheet lined with parchment paper. Flatten dough into a round ball,

refrigerate for 20 minutes. While the dough is chilling in the refrigerator, make the blackberry

jam and the blackberry glaze.

Jam Directions:

In a medium sized saucepan, add blackberries, sugar and lemon juice. Heat on medium and stir

frequently for 10-15 minutes. Add cornstarch to jam, stir. Optional: add to a blender to remove

larger fruit pieces. Pour into a heat safe bowl. Let stand.


Glaze Directions:

In a bowl combine: confectioner’s sugar, So Delicious® Dairy Free unsweetened coconutmilk,

Pure Vanilla, and reserved Blackberry Jam. Combine well, let stand.

Baking Directions:

Preheat oven to 350 degrees.

Remove dough from refrigerator. Roll the dough into two large, equal pieces on parchment paper.

Cut dough into desired shaped with cookie cutters. Place bottom piece of dough on a parchment

lined baking sheet. Spread blackberry jam on the dough. Place equal sized dough shape on top.

Crimp the top edges of the dough with a fork. Poke numerous holes in the tops of the pastries

with the fork. Repeat with the dough and jam. Bake at 350 degrees for 10-20 minutes, checking

every three minutes after baking for 10 minutes. As, baking time will vary based on pastry size.

Allow pastries to cool. Once cool, top with fresh blackberry glaze. Enjoy!
